Monday's Meal of the Day - Quinoa Pancakes


This Monday's Meal of the Day brings to you another healthy breakfast option, 'Quinoa Pancakes' .. You may be thinking, that I am going quinoa crazy ..Well not really, I had made a bit extra and just wanted to try something different than the usual way I eat it .. Check my previous recipe of 'Quinoa Patties' incase you missed it ..





So I looked up a lot of recipes and mixed a few and came up with this. 

Ingredients
  • 1 mug cooked Quinoa (you can also use quinoa flour if you like)
  • 3/4 mug Whole Wheat Flour (you can opt for the all purpose flour, if you like)
  • 1 1/2 tsp Baking Powder
  • A pinch of Salt
  • 2 eggs (1 whole, 1 white)
  • 1/4 mug Yogurt (you can add flavored if you like)
  • 1/2 mug Milk (I used full cream, you can use skim or almond)
  • 1 tbsp agave (optional)
  • 1/2 banana mashed
  • 1 1/2 tsp Vanilla flavor
  • Oil to pan fr
  • Maple flavored Sugar free Syrup (for topping)
  • 1 Apple chopped (for topping)
  • 1 large Banana chopped (for topping)

How to
  •  Whisk together cooked quinoa, wheat flour, baking powder, and salt. 
  • Separately whisk together eggs, yogurt, milk, agave, mashed banana and vanilla flavor.Whisk well. 
  • Take the batter, put on the pan and pan fry till golden brown on both sides. 
  • Serve hot, topped with your choice of fruits, nuts and sauce. I used apples, bananas and maple flavored sauce.  
 This cooked about 7 pancakes ..Hope you liked the recipe ..
